Other Names: Bhaath Cake, Bolo de Coco, Coconut Cake, Rava Cake, Sooji Cake
Baath cake is another Goan Christmas specials that forms the part of the kuswar, the unique set of Christmas goodies. It is a moist cake, rich with coconut and one of the authentic goan dish. Made with semolina, eggs, coconut, sugar, butter, this is extra rich, flavorful with all the ingredients that go into preparing it, very simple one and mouthwatering !!! Ingredients:
2 + 1/2 cups coconut, fresh/frozen and grated (~400g)
1 full cup semolina (~200g)
1 full cup sugar* (~200g)
1/8 cup all purpose flour (maida)
3/4 cup butter/ghee
3 eggs
1 tsp baking powder
1 tsp vanilla essence
4 tbsp dry fruits (optional)
Preparation Method:
1. Beat the eggs till fluffy and add grated coconut slowly with continuous mixing.
2. Combine semolina, sugar, flour and baking powder and add slowly to the above mixture with continuous mixing.
3. Beat the butter/ghee and add it to the above mixture. Continue mixing.
4. Leave the batter for 6 –7 hours or overnight.
5. Add vanilla essence (or desired flavor) and mix.
6. Transfer the batter in a greased baking tray (I've used 8x8 glass tray) and top with dry fruits.
7. Preheat oven to 325˚ F (165˚ C) and place the tray at the center.
8. Bake for 45 – 50 minutes or until a knife inserted in the center comes out clean
Preparation Time: 30 minutes
Baking Time: 45 – 50 minutes
Note: * Add more sugar if you need the cake to be more sweet.
The baking tray has to be half full so that the cake is cooked properly, so use a baking tray accordingly.
Coat the dry fruits with some flour before adding to the batter.

I'm sure dear the cake is tasty one, but can't decide what I like most in the pic your presentation with all x'mas deco or cake...both are equally good....never tried sooji in cake, will give it a try sometime but without eggs ...

@Gulmohar, @Sarah..E's basically a Goan bought up in Mumbai..although I feel for most of the Roman catholics in Maharashtra, Mumbai, Karnataka(along Konkan)..its the Goan style of celebrating Christmas !!

seems fantastic...am gonna try it soon, but had few concerns....what is the reason to let it sit for 6hrs..Secondly, if we let it soak with coconut and egg, how safe is it and wouldn't it spoil....thanks anyways for the recipe..

Thanks for visiting my blog. The batter is soaked because semolina/rava is used to make this cake. It wouldn't spoil even if the batter is left overnight given that temperatures are normal in the room (around 25C). But yes, if you stay in a hot and humid place like Mumbai, its better to leave it in the fridge.
hi there,after bookmarking this recipe for a few weeks,i tried to do it today as it's my friend's son's birthday.But my batter is quite dry,not wet like how yours look in the photo.I used 2 1/2 cups desiccated coconut as that's all we have here in the UK.Shall I add milk/yoghurt to make it moist?Since you said the cake is a moist cake & I don't see how it will be moist when there's no liquid in it.Thanks

The butter, eggs and fresh coconut should all make it a moist batter. Pls ensure you are using fresh coconut or freshly grated/frozen and not dry coconut. Although sugar, butter and eggs should make a smooth batter.
